Maldives: Paradise Found and Lost

Posted on June 11, 2021June 11, 2021 by Alexandria

Located in the Indian Ocean, the Maldives captivates holiday-goers with crystal clear oceans and pristine white beaches, but there’s a side no one wants to talk about: behind all of the cleverly angled photos of scenery and happy-go-lucky guests holding pretty blue cocktails are exorbitant hidden costs and some of the world’s most fucking miserable…

How to make sour cream from cottage cheese

Posted on June 20, 2020June 8, 2021 by Alexandria

Making “sour cream” from cottage cheese is the most basic and quick fix you can create in your kitchen. Although this is so simple that it barely warrants a recipe card, it’s something I make multiple times a week – I never remember to purchase sour cream – so I thought I would share it…

Chicken Salad Slaw

Posted on June 20, 2020June 20, 2020 by Alexandria

A mashup of chicken salad and coleslaw, this very easy recipe is great on it’s own, served on a sandwich, or as a side dish at your next barbecue. It’s cost-friendly and takes just minutes to prepare (or can be prepared a day ahead of time). I had chicken breasts still attached to the bones,…

Frittatensuppe (traditional Austrian soup with crepe noodles)

Posted on May 25, 2020May 25, 2020 by Alexandria

Hello, everyone! I am happy to share with you one of our favorite soups: Frittatensuppe. Since it is my husband’s favorite, it’s a recipe I make often at home and constantly enjoy. It’s also something we enjoy often at restaurants in Austria as our appetizer, or to begin a home-cooked family meal. Frittatensuppe requires very little…

Potato pancake crust pie with a filling of ricotta and greens

Posted on May 1, 2020May 25, 2020 by Alexandria

I made this potato pancake ‘pie’ because I had a problem in my pantry and needed an immediate solution: I had a large number of potatoes had no business sitting around my kitchen anymore and bits and pieces of cheeses, herbs, and vegetables. I try hard not to waste, so my solution evolved into this…

Roast Chicken with Crispy, Seasoned Skin

Posted on April 28, 2020May 25, 2020 by Alexandria

Roast chicken is a meal that everyone should learn to cook and then make it again and again until it’s their very own beautiful creation. That is exactly what I have done here. I have watched my family make turkeys and chickens and learned little tricks and preferences for taste along the way. I’ve read…

Roasted Cauliflower & Garlic Soup, Two Ways

Posted on April 28, 2020June 7, 2020 by Alexandria

The method of this soup can be used for such a large variety of vegetables. I know that you can swap the cauliflower for broccoli, and I do not see why this cannot translate to potatoes, leeks, carrots, or any other vegetables that roast well and has a good, hearty flavor. If you don’t have…

Bärlauch (Wild Garlic) Spätzle

Posted on April 26, 2020June 7, 2020 by Alexandria

What is Spätzle? Spätzle is an Austrian (and German) egg noodle that is shaped by pressing dough through the holes of either a spätzle maker or a slotted spoon. You do not need any fancy material to make spätzle. Having the proper cheeses is important to make Käsespätzle (cheese spätzle), but fortunately, we are making Bärlauch…

The most engaging ways to learn about the world around us is to experience through food and quality exploration.

Food brings loved ones together and nurtures tradition and nothing harnesses more joy than pouring my love into a home-cooked meal.

Exploration keeps me uncomfortable, constantly learning and yearning.

  • Lunch at the Břevnov Monastery - ostrich steak with bramboračky, halušky with smoked pork and cabbage, coleslaw, skewers of pork and bacon, fries and of course, their wonderful beer and lemonades.

After so much food, I'm still ready to eat again. The monastery menu is filled with hearty, gamey meats and sides. We love a good Czech meal, it's always so satisfying and the beer keeps you going.

  • 📍 Farma Pálava - Mušlov, Czech Republic

Here, you drink local wine and house made cheeses (I wouldn't be surprised if their cured meats were, too).

We drank Veltlínské Zelené (Grüner Veltliner), Ryzlink Rýnský (Reisling), and Pálava. Our meals featured cheese curds, cow cheeses, prosciutto and other cured meats, fresh bread, and the accompaniments.

Accessible by bike trail (or car) we cycled here from Mikulov, then through Sedlec to Hlohovec, before returning.

  • Picked a little lettuce for lunch today and good herbs for whatever is cooking for dinner. City gardens are possible with a bit of compromise on space and many railing boxes, or just finding the right light indoors and shifting things around as we go. It's even brought bumblebees to our high up space and the dog loves sniffing the smells.

  • Briefly marinated scallops - salt pepper, hot paprika - pan seared. A pan sauce of a little leftover coconut milk, broth, garlic, and lemon. Really good, probably overpriced bucatini from an Italian shop in Prague 7 . Roasted zucchini in the oven, shiitake mushrooms quickly fried in some ghee. All seasoned to taste. Fresh herbs on top.

The city is getting pretty fucking hot so it's almost time to switch to "cold dinners" as it goes in German or sweating profusely over the grill - because I bought one and should use it - but this one was worth it as an accordion plays, the French lady sings, and Pavarotti blasts in the background. This city is magical.

Scallops ordered from @boxxicz and if you live in Prague, place an order. It always smells fresh, we are always happy. Not an ad just really enthusiastic about getting real seafood in this part of Europe.

  • The Maldives is the pinnacle of paradise, a destination for those seeking the heights of beauty. The country is also a geographical marvel, home to a rich culture and cuisine heavily based from the island's bounty of tuna and coconut.

It's also a bit of a tragedy, as the narrative pushed by influencers, marketing and media is only one of happy people sitting on pristine beaches and swimming in crystal waters. When only one story is told about what it's like to stay at one of the hundreds of island resorts, it's hard to believe it could be anything less than filled with happy guests and warm, fuzzy feelings.

If you're just here for the food, under "cuisine" I talk about some wonderful meals we got to taste with links that head to a Maldivian database of recipes. If you're here for the travel, too, and want to hear about another side of the story, you're also in the right spot
